What was the inspiration behind the design of Piloto, and how did the concept evolve?
We drew inspiration from European neighborhood cafés (cafés de barrio), which serve as everyday gathering spaces for the community. Initially, we referenced these cafés quite literally, incorporating their familiar elements and ambiance. However, as the design process progressed, we moved beyond imitation, refining a unique identity that blends tradition with contemporary aesthetics. The result is a space that feels both familiar and distinct, inviting guests to experience a reimagined version of the classic neighborhood café.

How does the unique mirror placement enhance the ambiance and spatial experience for visitors?
The mirror is a key design element that transforms the perception of space. By visually expanding the café, it creates a greater sense of openness while also adding depth and dimension to the environment. More than just a functional feature, the mirror introduces an element of discovery—visitors experience subtle shifts in perspective as they move through the space. Its reflective surface enhances the play of light, amplifying the atmosphere and making the space feel both dynamic and immersive.

Can you elaborate on the choice of raw concrete for the bar and how it contributes to the overall aesthetic?
The concrete bar serves as a unifying centerpiece, grounding the space with a bold, sculptural presence. Inspired by brutalist architecture, its raw, unpolished texture contrasts with the softer elements of the design, creating a striking yet harmonious balance. Over time, the material develops a patina, subtly evolving with use and reinforcing its timeless appeal. This aging process adds character, ensuring that the bar remains not just a functional element, but also a living feature that grows with the space.

The cannon-shaped lamp is a striking feature. What led to its inclusion, and what does it symbolize within the space?
The lamp was designed as both a visual statement and a functional necessity, seamlessly integrating with the kitchen’s extraction system. Its cylindrical form and placement create a strong focal point, drawing the eye upward and establishing a sense of continuity between the different design elements. When reflected in the mirror, the lamp’s presence is amplified, reinforcing the café’s layered and immersive aesthetic. Its bold, sculptural quality embodies the balance between practicality and artistic expression that defines Piloto’s design.

How do the natural wood furnishings contribute to the warm and inviting atmosphere of Piloto?
Natural wood plays a crucial role in softening the raw, industrial elements of the space. By introducing warmth and texture, it creates a welcoming contrast to the cool, monolithic concrete bar. The furniture is not only functional but also enhances the overall sensory experience, offering a tactile richness that encourages visitors to engage with their surroundings. Additionally, the wood elements serve as elegant display surfaces, seamlessly integrating with the café’s operations while reinforcing a sense of craftsmanship and quality.

In what ways does Piloto’s design reflect the local culture and community of downtown Querétaro?
Piloto is deeply rooted in its local context, both in its design approach and its operational philosophy. By collaborating with regional suppliers and featuring locally sourced products, the café fosters a direct connection to the community. It serves as more than just a coffee shop—it’s a gathering place that encourages interaction and strengthens the cultural fabric of downtown Querétaro. The design reflects this spirit, creating a space that is both contemporary and deeply connected to its surroundings, inviting people to feel a sense of belonging and shared experience.
