Set to transform the dining and social landscape of Sydney’s Sutherland Shire, Hazel is a new hospitality development redefining what it means to eat, drink, and gather locally. Located on a prominent site in Gymea, Hazel is more than a venue—it’s a place-making project with architectural ambition, community spirit, and commercial vision. We spoke with the project team to understand the story behind Hazel and what it means for the area.

What was the vision behind Hazel, and why Gymea?

Gymea is a growing and evolving suburb with a strong community presence and a maturing hospitality scene. We saw an opportunity to introduce something fresh and elevated—something that could serve locals but also attract destination diners. The vision for Hazel has always been to create a space that blends sophistication with warmth. We wanted it to feel special, but still deeply rooted in the local context.

What makes Hazel architecturally unique?

Hazel’s design makes full use of its prominent site and generous footprint. The building is arranged over multiple levels to create distinct zones—each with its own mood and function—but all connected by a cohesive design language. We’ve used warm materials, clean lines, and generous glazing to ensure natural light and openness, while maintaining intimacy. The detailing was a priority from day one, and it’s something we think guests will feel in the experience.

How does Hazel aim to support the local community?

Hospitality is about people—and Hazel is designed as a social anchor. It’s more than just a place to eat or drink. We’re building opportunities for local employment, events, and cultural exchange. We’ve already had great conversations with suppliers, artists, and musicians from the area. There’s a real excitement about having a venue that’s locally owned, community-focused, and here for the long term.
